Languedoc
Languedoc lies along the Mediterranean coast in southern France from the Rhône Valley in the east to the Catalan border in the south and, together with Roussillon, forms France's largest wine region. The area contains 23 official AOCs, including Languedoc AOC, Corbières, Minervois, Saint-Chinian, Faugères, Picpoul de Pinet, as well as Limoux and Blanquette de Limoux for sparkling wines.
The climate is distinctly Mediterranean with warm dry summers, mild winters and over 300 days of sunshine a year, and the soils range from limestone and clay to slate, granite and gravel. The red wines are made predominantly from Syrah, Grenache, Carignan, Mourvèdre and Cinsault, while the whites are dominated by Picpoul, Grenache Blanc, Roussanne, Marsanne, Vermentino and Viognier. The style of the reds is typically spicy and full-bodied with ripe dark berries, garrigue herbs, liquorice, pepper and soft tannins, while the whites have citrus, peach, herbs and a saline minerality. The area is known as home to about a third of France's total wine production and holds the country's largest concentration of organic vineyards.

Storage
Store the bottle horizontally at 12–14°C and avoid direct sunlight, vibrations, and temperature fluctuations.
Opening
Allow the bottle to stand upright for 24–48 hours before opening to allow sediment to settle. Use a professional corkscrew and open carefully.
Enjoyment
Serve at 17–18°C and be patient – there is a great difference in how and how quickly wines open up when they are aerated.
