Classified as Appellation Chorey-lès-Beaune Contrôlée, the wine is produced in the Côte de Beaune, just north of Beaune, between Aloxe-Corton and Savigny-lès-Beaune. Chorey-lès-Beaune is one of the few village appellations located on the plain rather than the slopes. Granted AOC status in 1970, the area covers approximately 134 hectares where vines grow on marl-limestone alluvium with a stony subsoil that becomes more gravelly towards Aloxe-Corton and more clayey towards Savigny. The appellation is known as an accessible introduction to the Côte de Beaune style and village-level Burgundy. This wine is made exclusively from Pinot Noir, a grape variety that dominates the local vineyards and is also widely cultivated in regions such as Champagne, Germany, Oregon, and California. The wine is bottled at 13% alcohol by volume.
Domaine Tollot-Beaut was founded in 1880 by François Tollot and is considered one of the most highly regarded small family wineries in Burgundy. A significant historical milestone for the estate occurred in 1921 when they became one of the first in the region to bottle their own wines, rather than selling them in barrels to négociants. This was a pioneering decision made decades before it became common practice in Burgundy. Operating as an owner-harvester, the estate bottled this wine directly at the domaine. Today, the winery is run by the fifth generation, cousins Nathalie, Olivier, and Jean-Paul Tollot. They manage 24 hectares spread across four municipalities, holding rare monopoles like Savigny-lès-Beaune Champs-Chevrey and Chorey-lès-Beaune Pièce du Chapitre, alongside a Grand Cru portfolio that includes Corton, Corton-Bressandes, and Corton-Charlemagne.
