The 2001 Les Demoiselles de Falfas is an estate-bottled red wine produced by John and Véronique Cochran. Originating from the renowned Bordeaux region in France—an area that has been exporting wine since the Middle Ages and is famous for its historic 1855 classification—this vintage achieved a score of 89 points and is characterized as elegant and acid-driven.
The wine is crafted under the Appellation Côtes de Bourg Contrôlée. Located on the right bank of Bordeaux at the mouth of the Dordogne and Garonne rivers, opposite Margaux across the Gironde estuary, Côtes de Bourg is recognized as one of the oldest wine regions in Bordeaux. It gained its AOC status in 1936. The vineyards here benefit from a well-draining mixture of gravel, alluvium, clay, and limestone soils.
Classified as a Grand Vin de Bordeaux, the wine is made from a blend of Merlot and Cabernet, sourced from vines planted in 1990. Merlot is a classic blue grape frequently cultivated in Bordeaux, as well as in California, Washington, and Northern Italy. The term Cabernet generally refers to thick-skinned, relatively late-ripening varieties such as Cabernet Sauvignon and Cabernet Franc, which are widely grown in regions like Bordeaux, Veneto, Trentino-Alto Adige, California, and Tuscany. The Cochran estate cultivates its parcels using biodynamic agriculture, strictly avoiding synthetic chemicals, fertilizers, herbicides, fungicides, and insecticides. The entire vineyard is plowed and maintained naturally to respect the annual cycles and the biology of the soil. The wine is bottled unfiltered at the property with an alcohol content of 12.5%.

Storage
Store the bottle horizontally at 12–14°C and avoid direct sunlight, vibrations, and temperature fluctuations.
Opening
Allow the bottle to stand upright for 24–48 hours before opening to allow sediment to settle. Use a professional corkscrew and open carefully.

Serve at 17–18°C and be patient – there is a great difference in how and how quickly wines open up when they are aerated.
