Made exclusively from 100% Pinot Noir, the wine is based on an elegant blue grape. While cultivated here in Israel, Pinot Noir is most typically associated with classic wine regions such as Burgundy, Champagne, Germany, Oregon, and California.
The production process for this vintage involved careful attention in the vineyard, where the grapes were hand-picked during a night harvest on August 17, 2005. Following the harvest, the wine was aged for 13 months. Furthermore, the wine is certified Kosher for Passover under the supervision of Rabbi Joseph Harel.

Judea
Judea is a prominent wine region located in central Israel, stretching from the coastal plain by the Mediterranean Sea up towards the mountains around Jerusalem. The area benefits from a Mediterranean climate with warm, sunny days and cool nights, which creates favorable conditions for viticulture. The soil is varied and particularly marked by limestone, clay, and terra rossa, which characterize the hilly landscape.
Viticulture in Judea has roots that go back to antiquity, which is evidenced by numerous historical wine presses found in the area. After a long pause, the modern wine industry was revived during the 20th century. In recent decades, the region has undergone a significant development, where the focus has shifted from volume production to the establishment of quality-oriented wineries.
In 2020, Judea achieved historical recognition by becoming the first Israeli wine region that was officially registered as a protected designation of origin (Appellation of Origin). The region, which also includes the sub-regions Judean Hills and Judean Foothills, is home to, among others, the valley Ella Valley. Today, a wide range of international grape varieties are grown in the area, including Cabernet Sauvignon, Merlot, Syrah, Pinot Noir, and Chardonnay.

Store the bottle horizontally at 12–14°C and avoid direct sunlight, vibrations, and temperature fluctuations.
Opening
Allow the bottle to stand upright for 24–48 hours before opening to allow sediment to settle. Use a professional corkscrew and open carefully.

Serve at 17–18°C and be patient – there is a great difference in how and how quickly wines open up when they are aerated.
