The 1993 Pergole Vece is a sweet red wine produced by Le Salette under the Recioto della Valpolicella Classico appellation. Originating from the Veneto region in northeastern Italy, this wine is crafted from the Pergole Vece vineyard. The vintage was bottled in a 500ml format with an alcohol content of 13%, from a total production of 2,200 bottles. Veneto is one of Italy's most productive wine regions, stretching from the Alps to the Adriatic Sea, and is renowned for its diverse output ranging from sparkling wines to deep, concentrated reds.
Recioto della Valpolicella is considered the original ancestor of both Amarone and standard Valpolicella. The area, located north of Verona, holds one of Italy's oldest sweet wine traditions, with historical roots tracing back to the Rhaetic wines of the Roman era. The production relies on the traditional appassimento method. After harvest, the grapes are dried for 100 to 160 days on bamboo racks or in a dedicated drying room known as a fruttaio. This extensive drying process concentrates the natural sugars in the grapes. During winemaking, the fermentation is intentionally stopped early, leaving a significant amount of residual sugar in the final wine.
The wine is made from a traditional regional blend consisting of Corvina, Rondinella, and Molinara. Corvina serves as the central grape in Valpolicella, while Rondinella is a classic Venetian variety frequently used alongside it. Molinara, a blue grape native to Veneto, derives its name from the Italian word for mill, "mulino," due to a thick, white waxy layer on the berries that resembles a dusting of flour. Historically, Molinara has been a staple in these classic blends, and its natural resistance to fungal diseases makes it particularly well-suited for the appassimento drying process. Although modern appellation rules no longer mandate its inclusion and overall plantings have decreased, traditional wine houses continue to utilize Molinara in their blends.
