Languedoc
Languedoc ligger langs Middelhavskysten i det sydlige Frankrig fra Rhônedalen mod øst til den catalanske grænse mod syd og udgør sammen med Roussillon Frankrigs største vinregion. Området rummer 23 officielle AOC'er, herunder Languedoc AOC, Corbières, Minervois, Saint-Chinian, Faugères, Picpoul de Pinet samt Limoux og Blanquette de Limoux for mousserende vine.
Klimaet er udpræget middelhavspræget med varme tørre somre, milde vintre og over 300 solskinsdage årligt, og jordene varierer fra kalk og ler til skifer, granit og grus. Rødvinene laves overvejende på Syrah, Grenache, Carignan, Mourvèdre og Cinsault, mens hvidvinene domineres af Picpoul, Grenache Blanc, Roussanne, Marsanne, Vermentino og Viognier. Stilen for rødvinene er typisk krydret og fyldig med modne mørke bær, garrigue-urter, lakrids, peber og blød tannin, mens hvidvinene har citrus, fersken, urter og en saltig mineralitet. Området er kendt som hjemsted for omkring en tredjedel af Frankrigs samlede vinproduktion og rummer landets største koncentration af økologiske vinmarker.

How it handles
you your wine
Storage
Store the bottle horizontally at 12–14°C and 70% humidity. Avoid direct sunlight, vibrations, and temperature fluctuations. A wine that has aged for 40 years deserves stable conditions until opening.
Opening
Allow the bottle to stand upright for 24–48 hours before opening, so that the sediment settles. Use a professional corkscrew and open carefully. An old cork is fragile — turn slowly. Immediately decant into a wide Burgundy carafe.
Enjoyment
Serve at 17–18°C in a large red wine glass. Decanting for at least 2 hours is recommended — vintage wines from 1985 are at their peak and will open up beautifully with time. Drink within 4–6 hours of opening.
